Multigrain Chocochip Pancakes

Pancakes are always delicious with plenty of butter and your favourite syrup. This flat round cake is very easy to make and ideal for breakfast or anytime. There are hundreds of pancake versions depending from region to region and the prepared batter has a quick leavening agent such as baking powder, yeast, etc. which helps in quick preparation for breakfast without any hassles.

Pan cakes are a favourite in our family because we hook to anything that is buttery and sweet. A healthy breakfast makes a great start for your day and now days everybody wants to have a good healthy breakfast. Everybody wants something nutritious and healthy and looks upon everything that has an extra calcium, extra protein and vitamins. All the glossy advertisements also feature something extra in their food products. Everything is so eye catchy that a huge crowd follows this  ‘something extra’ in the products. Let me cut short here and tell you about this extra nutritive multigrain flour easily available now days. This ‘extra’ caught my attention too and I quickly added it to my trolley. I always used to stock up readymade pancake mixes to save time but slowly switched to making my own versions of it. I decided to make the multigrain pancakes and adding the chocolate chips to it made it more attractive that my daughter didn’t miss to finish off everything on the plate. This recipe gives about 15 small size pancakes.

 

Ingredients:-

  1. Buttermilk – 2 cups.
  2. Multigrain Flour – 1 cup.
  3. All-purpose flour – ¾ th cup (three-fourth).
  4. Sugar- 2 Tablespoons.
  5. Egg – 1 no.
  6. Dark chocolate chips- ½ cup (Half).
  7. Baking powder- Half teaspoon.
  8. Baking Soda- Half teaspoon.
  9. Cocoa Powder- 1 Tablespoon.
  10. Vanilla Essence – Half Teaspoon.
  11. Butter to brush the pan
  12.  Honey or Maple syrup to serve.

 

Method:-

  • Combine buttermilk, sugar, egg and vanilla essence in a bowl. Whisk well to combine.
  • Add in the flour (multigrain and all-purpose together) and cocoa powder along with baking soda and baking powder to the buttermilk mixture to combine as a lumpy batter.
  • Finally add the chocolate chips and fold in until just mixed.
  • Heat a griddle or a fry pan on a medium low heat. Brush the griddle or pan with melted butter and drop in small scoops of batter.
  • Cook the pancakes till underside is golden brown in colour for 2-3 minutes. Flip over until browned on the other side for a minute. Continue the same with the remaining batter. Serve hot with maple syrup or honey.

The Multigrain flour used here is a blend of seven grains that includes wheat, soyabean, oats, maize, barley, ragi and lentils in equal proportions. You can create your own multi grain flour by mixing in different types of flour and bran in equal quantities.
