After all the celebrations of Christmas, New Year and My hubby’s birthday, I’m just out of the festive mood and back on my track of blogging. Baking and cooking was on full fledge this festive season and I tried doing something more than last festive season. This time my kitchen was flooded with cakes and there were cakes everywhere. Still we were not tired of eating and sharing. Finally, we had to add them for breakfasts and desserts………still not saying ‘No’ to them.

Well, today’s post is not about cakes it is about chicken and grilling. Grilled Chicken for any occasion is perfect to keep up the pulse for any celebration especially for winters. I was always requested a grilled chicken recipe by my friends that was easy and tasted Asian. This recipe has got all the factors that you can tag it as EASY…. It is as practical as possible, with minimum ingredients and without a lengthy preparation procedure.

I usually include and cook Indian food for a get together that gives great results best suited for my Indian guests. Indian recipes involve lot of effort but I have decided to work on it my way, making it easy. Once the marinade is ready it’s usually quick with no other hard work. This spicy grilled chicken recipe is simple to follow, is made with easily available ingredients in an Asian kitchen pantry. It looks similar to a Tandoori chicken but has a spicy zesty flavour of any Asian chicken Roast. You can skip the second step using store bought readymade ginger-garlic paste, chili and cumin powders to make it easier. Since I like cooking from scratch, the flavors will be more rustic and will give exotic aroma. It is a no-complication recipe that everyone can make including a beginner in a kitchen. So here is the recipe that will fancy as your party show stealer which can be thoroughly enjoyed with the Potato Bake.

Ingredients:-

  1. Chicken thighs- 4 nos.
  2. Whole red chillies- 4-6 nos.
  3. Dried Ginger- 1 inch piece.
  4. Garlic – 6-8 cloves.
  5. Cumin- 2 teaspoons.
  6. Zest and juice of a big sized lemon.
  7. Salt to taste.
  8. Pomace Olive oil – 4 tablespoons.

Method:-

  • Prick the chicken thigh with a skewer all over.
  • Mince garlic and keep aside. Lightly dry roast all the dry ingredients in a pan on a low flame till the ingredients start popping slowly. Cool and crush them well with a mortar and pestle.
  • Combine garlic with all the crushed dry ingredients. Toss it well or process and grind to a paste with the juice of the lemon and oil. (Reserve half of the oil for basting the chicken)
  • Rub the paste thoroughly on to the chicken in a bowl. Cover with a cling wrap, refrigerate and allow marinating at least one hour or overnight. Remove the chicken from refrigeration 20-30 min before you are ready to grill.
  • Preheat your grill to medium high. Grill each side of the meat until done while basting with little oil. Serve hot alongside stir fried season vegetables or potatoes.

Basting is a technique of brushing or pouring liquids such as oil or sauces over food, usually on meat or poultry as it cooks. This helps to preserve moisture, adding flavor and making your food appear attractive.
